I’d like to install my brand new Samsung EVO Pro 850 256GB but at the same time keep the old HHD as slave in order to be used as storehouse.

There is no such master - slave environment here (Unlike PATA) with SATA. What you want to do is follow this IFIXIT guide: Installing iMac Intel 27" EMC 2429 Dual Hard Drive Kit to put your SSD in. All of our iMac’s are setup as dual drive this way. Once you get the SSD prepped up with a working OS all you need to do is open the Start Up control panel and alter the setting to the SSD to make it the boot drive - Done!

If both drives are bootable, Go to Settings –> Start up Disk in OSX. Here you can select which drive starts up by default.
