Just bought a new 2019 MacBook Air, and the camera looks like it is 480p or something, it is very grainy and horrible quality. This is a major difference to my 2015 one. Any ideas? SIDE BY SIDE:
I think the issue isn’t really an issue. I think they’re the same, it’s just that the 2019 is worse in darker conditions and the quality is the same, just more noticeable on a better display.

Both systems have a 720p HD camera. The newer 2020 M1 system also has a 720p HD camera but unlike the 2019/20 intel models Apple added ML logic to the output which improves the image.
